January 20th, 2012-Rocky Road Brownies

Rocky Road Brownie Dessert, made by yours truly and eaten by yours truly :)

The Pampered Chef ® Microwave Rocky Road Brownie Dessert Recipe

1 cup (250 mL) walnut halves, toasted   3/4 cup (175 mL) all-purpose flour   1 1/2 tsp (7 mL) baking powder   1/4 tsp (1 mL) salt   3/4 cup (175 mL) butter (1½ sticks)   4 oz (125 g) unsweetened chocolate   1 1/2 cups (375 mL) sugar   3 eggs   16 large marshmallows   20 milk chocolate kisses, unwrapped  Vanilla ice cream (optional)

Coarsely chop walnuts using Chef's Knife. Place walnuts in (1-cup/250-mL) Prep Bowl; set aside. Combine flour, baking powder and salt in Small Batter Bowl. Cut butter into pieces and chop unsweetened chocolate; place butter and unsweetened chocolate into Classic Batter Bowl. Microwave, uncovered, on HIGH 1–2 minutes or until mostly melted, stirring every 30 seconds. Add sugar and eggs to chocolate mixture; whisk until smooth using Stainless Whisk. Fold in flour mixture and 1/2 cup (125 mL) of the walnuts until incorporated using Small Mix ‘N Scraper®. Pour batter into Deep Covered Baker, spreading evenly. Microwave, uncovered, on HIGH 5–7 minutes or until wooden pick inserted in center comes out clean and edges are firm. Carefully remove baker from microwave using Silicone Oven Mitts. Meanwhile, snip marshmallows in half crosswise using Professional Shears. Top brownie with marshmallows, chocolate kisses and remaining 1/2 cup (125 mL) walnuts. Microwave, covered, on HIGH 1–2 minutes or until marshmallows start to soften. Remove baker from microwave. Let stand, covered, 5 minutes. Spoon onto plates; serve with ice cream, if desired.

A pharmacist looks out the front of the store and sees a woman holding a bottle jumping up and down in the parking lot. The pharmacist walks out to the parking lot and asks the woman whats the matter. She replies " I saw it said 'Shake Well' after I took it".

January 17th, 2012-Leave your Anger at the Tree

Many years ago a stressful job stirred within T.D. Terry daily bouts of anger.  His daughter, upon hearing him describe them years later, responded with surprise.  "I don't remember any anger during those years."

He asked if she remembered the tree--the one near the driveway about halfway between the gate and the house.  "Remember how it used to be tall?  Then lost a few limbs?  And after some time was nothing more than a stump?"

She did.

"That was me."  T.D. explained.  "I took my anger out on the tree.  I kicked it.  I took an ax to it.  I tore the limbs.  I didn't want to come home mad, so I left my anger at the tree."

Went to my first movie alone in the States.  Funny the ticket name, Beauty 3D.  I feel as though we sometimes have to look into a 3D world to find Beauty these days, at least according to our social media standards.

I often felt as if I was an outsider doing everything I did, only being tolerated at the various activities.
Galangs are tough.
We fight Cancer.
We fight death.
We fight heartbreak.
We fight Cancer again.
We struggle with depression.
We struggle with addictions.
We fight Cancer over again.
We Beat Cancer.  We beat Death. We beat Heartbreak.  We beat Cancer again.  We beat Depression.  We beat Addictions.  We beat Cancer over and over again.  


We are tenacious and we do not let them get to us.
